Try Something New - In the Kitchen!

If your household is anything like ours, you probably have your stable of go-to recipes when it comes to lunch, dinner or deserts. You know, those tried and true recipes you can always count on.

But what happens when your child - who had been a fan of macaroni and cheese, as well as cheesesteaks and milkshakes - heads off to college and returns from their first semester as a vegan? You could complain about it and tell the child to eat noodles and rice when they’re home. Or, you can head to the catalog of the Mercer County Library System, which offers a huge variety of vegan cookbooks.

Whether you’re looking for a vegan breakfast, lunch, dinner, snack, or even a desert, there is a cookbook in the system that offers delicious dishes for the vegan - as well as the non-vegans - in the house. The resource has been a valuable one in our home and we’ve gone back to it often. In the last year, it’s safe to say we’ve checked out dozens of these cookbooks. And based on the way they seem to come and go through the check-outs and check-ins, many others have as well.

Even in our current environment of being sheltered at home, the MCLS system has a large number of vegan cookbooks available in digital format through hoopla and eLibraryNJ.

While the entire family may not make the switch to being vegan, many of these recipes can be enjoyed by your average run of the mill carnivore. We’ll often make them for ourselves when we’re on our own. We’ve also come to realize that if you don’t bother to tell others at the table the recipe is vegan, they’ll love it as well. We have come to notice that many people are scared off just by hearing the word vegan.

When you search vegan cookbooks in the MCLS catalog, 141 results come up. We haven’t checked them all out - yet - but here are a few of our favorites that are available from the Mercer County Library System.

Vegan Mac & Cheese by Robin Robertson - You won’t be able to tell the difference between the good old fashioned way you used to make macaroni and cheese and many of the 50-plus recipes found in this cookbook. The recipes we have tried look and taste just like your everyday Mac & Cheese.

Five Ingredient Vegan by Katy Beskow - The recipes in this book are quick and simple. The title says it all. Easy to make without having to track down a whole bunch of ingredients. Bean Burritos, Bakes Polenta Fries, as well as the tasty deserts are highly recommended.

The Vegan Instant Pot Cookbook by Nisha Vora - We combined two new ventures in one, coming up with vegan recipes to try in our new Instant Pot. There are several vegan cookbooks for the Instant Pot in the MCL collection.

The Chickpea Revolution Cookbook by Heather Lawless - Since chickpeas are an ingredient everyone in the house approves of, we’ve found several in this cookbook that have been a hit at home. You will have countless variations of burgers to choose from.

Vegan in the House by Heather Whinney - It’s not just tofu recipes in this cookbook. This cookbook has quick lunch ideas as well as dinners which would appeal to everyone.

If you are looking for quick and easy vegan recipes to give a try, check out either the Student’s Go Vegan Cookbook or 15-Minute Vegan Comfort Food.

Also, don’t get the idea any of these cookbooks offer bland, tasteless recipes. In fact, to spice it up you could try East Meets Vegan, Heavenly Vegan Dals and Curries, or Vegan Thai Kitchen.

Oh, and while the holidays are still several months away, keep in mind Happy Vegan Christmas, Vegan Holiday Cooking, and Vegan Christmas.
